1. Check the certification symbol, not just the name. The term "kosher salt" refers to a grain size and texture used in the koshering process — it does not mean the salt itself is certified kosher. 2. Non-iodized for Passover. If you're buying salt to use over Pesach, you must choose non-iodized salt with a Kosher for Passover (KFP) symbol. Iodized salt is not KFP, and some KFP-certified salts specifically state this on the box.

3. Coarse vs fine matters for baking. Kosher salt comes in coarse and fine varieties, and they are not interchangeable by volume in recipes.
