Cheese Blintzes for Shavuot

Blintzes are a traditional dish served during the Jewish holiday of Shavuot, which commemorates the giving of the Torah on Mount Sinai. Blintzes are a type of thin pancake made from a batter of eggs, flour, and milk, filled with sweet cheese, and then fried until golden brown. Here are three different blintzes recipes for Shavuot, along with different topping ideas:

Recipe for Cheese Blintzes

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted and cooled
  • 1/2 teaspoon vanilla extract
  • 1 pound farmer’s cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • Vegetable oil or butter, for frying

Toppings:

  • Sour cream
  • Fruit preserves
  • Powdered sugar

Instructions:

  1. In a medium bowl, whisk together the flour and salt.

  2. In a large bowl, whisk together the milk, eggs, melted butter, and vanilla extract.

  3. Add the flour mixture to the milk mixture and whisk until smooth.

  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

  5. In a separate bowl, mix together the farmer’s cheese, granulated sugar, egg yolk, and vanilla extract until smooth.

  6. Heat a nonstick skillet or griddle over medium heat.

  7. Brush the skillet with vegetable oil or butter.

  8. Pour 1/4 cup of the batter onto the skillet and swirl it around until it covers the bottom of the skillet.

  9. Cook until the edges are golden brown and the top is set, about 1 to 2 minutes.

  10. Slide a spatula underneath the blintz and flip it over.

  11. Cook for an additional 30 seconds.

  12. Repeat with the remaining batter, stacking the cooked blintzes on a plate.

  13. Place a spoonful of the cheese mixture in the center of each blintz and fold the sides over to enclose the filling.

  14. Return the blintzes to the skillet and cook until the filling is warm and the blintzes are golden brown, about 2 to 3 minutes per side.

  15. Serve with sour cream, fruit preserves, or powdered sugar.

Ingredients:

  • 1 tablespoon lemon juice

  • Fresh blueberries
  • Maple syrup

Instructions:

  1. In a medium bowl, whisk together the flour and salt.
  2. In a large bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Add the flour mixture to the milk mixture and whisk until smooth.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. In a saucepan, mix together the blueberries, granulated sugar, cornstarch, and lemon juice.
